Most wines are created by the fermentation of fruit juices, but this magical beverage,
sacred to the ancient Celts and a host of Pagan cultures, comes from the fermentation of pure honey (itself a miraculous substance). There are several kinds of meads, some spiced or exotically flavored, some joined with fruit juices before fermentation. Mead can be dry and clear like a German white wine, or heavy and golden, or red like a port or cream sherry, and they are prized from Northern Europe to Southern Africa.
